Creamy Spinach Mac & Cheese

This Creamy Spinach Mac & Cheese combines tender elbow macaroni with a rich homemade cheese sauce featuring cheddar, mozzarella, Parmesan, and cream cheese. Fresh spinach adds color and freshness while keeping this classic comfort food extra satisfying.

Ingredients
  

  • 1 pound elbow macaroni
  • 2 to 3 cup fresh spinach
  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 3 cups freshly grated sharp cheddar cheese
  • 1½ teaspoons salt or to taste
  • 1 teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions
 

  • Bring a large pot of generously salted water to a boil. Add the elbow macaroni and cook until just al dente according to the package directions. Drain well and set aside.
  • In a large saucepan or Dutch oven, melt the butter over medium heat.
  • Whisk in the all-purpose flour and cook for 1 to 2 minutes, stirring constantly, until a smooth roux forms. Do not allow it to brown.
  • Gradually pour in the whole milk while whisking continuously to prevent lumps. Continue cooking for 4 to 5 minutes, or until the sauce thickens enough to coat the back of a spoon.
  • Season the cheese sauce with the salt, black pepper, and garlic powder. Stir well and taste, adjusting the seasoning if needed.
  • Remove from the heat. Add the fresh spinach and stirring occasionally, until just wilted.
  • Add the cooked elbow macaroni and slowly stir in 2 cups of the freshly grated sharp cheddar cheese until completely melted and smooth.
  • Transfer the mixture to a lightly greased baking dish and bake at 375°F for 15 to 20 minutes until hot and lightly golden on top, if you prefer a baked finish.
  • Let the mac and cheese rest for about 5 minutes before serving. Enjoy while it's hot and creamy.
