This Creamy Spinach Mac & Cheese combines tender elbow macaroni with a rich homemade cheese sauce featuring cheddar, mozzarella, Parmesan, and cream cheese. Fresh spinach adds color and freshness while keeping this classic comfort food extra satisfying.
Bring a large pot of generously salted water to a boil. Add the elbow macaroni and cook until just al dente according to the package directions. Drain well and set aside.
In a large saucepan or Dutch oven, melt the butter over medium heat.
Whisk in the all-purpose flour and cook for 1 to 2 minutes, stirring constantly, until a smooth roux forms. Do not allow it to brown.
Gradually pour in the whole milk while whisking continuously to prevent lumps. Continue cooking for 4 to 5 minutes, or until the sauce thickens enough to coat the back of a spoon.
Season the cheese sauce with the salt, black pepper, and garlic powder. Stir well and taste, adjusting the seasoning if needed.
Remove from the heat. Add the fresh spinach and stirring occasionally, until just wilted.
