If you've ever had a good Italian grinder sandwich, then you already know it's all about the combination of deli meats, cheese, and that tangy dressing that brings everything together. Well, I decided to take those same flavors and turn them into something a little different, and that's how this Italian Grinder Pasta Bake came together.
Now, you know I love a good pasta recipe, especially when it's loaded with meat, cheese, and a creamy sauce. And this one definitely checks all those boxes.
Instead of using bread like you would with a traditional Italian grinder, I'm using penne pasta. Those little tubes are perfect for holding onto all that creamy sauce, so you're getting plenty of flavor in every bite.
For the meat, I'm going with a combination of hard salami, ham, and pepperoni. Each one brings something different to the dish. The salami adds that bold, savory flavor, the ham gives it a little smokiness, and the pepperoni brings just enough spice to keep things interesting.
But what really makes this recipe stand out is the sauce.
I'm combining creamy Alfredo sauce with deli dressing to give this pasta that rich, tangy flavor you normally get from an Italian grinder sandwich. Then I throw in some sliced pepperoncini for a little acidity and a mild kick that helps cut through all that richness.
And of course, we can't forget about the cheese.
I'm using provolone because it's one of those cheeses that belongs on a good Italian grinder. It melts beautifully and gives the pasta that classic deli sandwich flavor. Then I add some shredded Italian-blend cheese on top because, as far as I'm concerned, if we're making a cheesy pasta bake, we might as well do it right.
Once everything is mixed together, I transfer it to a baking dish, cover it with cheese, and let the oven do its thing.
When it comes out, you've got this beautiful golden-brown layer of melted cheese sitting on top of creamy pasta loaded with deli meats.
And let me tell you, when you scoop into this dish and see that melted cheese pulling away from the pasta, you already know you're in for something good.
What I like most about this recipe is that it's simple. You don't need a bunch of complicated ingredients or cooking techniques. You're basically taking familiar ingredients, combining them in a different way, and creating something the whole family can enjoy.
Whether you're making this for a weeknight dinner, a family gathering, or just because you're in the mood for something cheesy and filling, this Italian Grinder Pasta Bake is definitely worth adding to your recipe collection.

Recipe variations
1. Spicy Italian Grinder Pasta Bake
If you enjoy a little extra heat, add ½ teaspoon of crushed red pepper flakes to the sauce or increase the pepperoncini to ¼ cup. You can also use spicy capicola instead of regular ham.
2. Chicken Italian Grinder Pasta
Replace the salami and ham with 2 cups of cooked, chopped chicken breast. Keep the pepperoni, provolone, and pepperoncini for that grinder-inspired flavor.
3. Extra Cheesy Italian Grinder Pasta
Add ½ cup of shredded mozzarella to the pasta mixture before baking. You can also sprinkle ¼ cup of freshly grated Parmesan cheese over the top for a more savory finish.
4. Italian Grinder Pasta with Vegetables
Add ½ cup of sautéed bell peppers, ½ cup of diced red onions, and a handful of chopped spinach to the pasta mixture. This gives the casserole extra color, texture, and flavor.
5. Italian Grinder Pasta with Sausage
Replace the ham with ½ pound of cooked Italian sausage. Mild sausage works well, but hot Italian sausage is a great option if you prefer something with a kick.
6. Lighter Italian Grinder Pasta
Use a lighter Alfredo sauce, reduced-fat mozzarella, and lean turkey ham or turkey pepperoni. You can also use whole-wheat penne for additional fiber.

Additional cooking notes
Can I make this ahead of time?
Absolutely! Assemble the pasta bake, cover it tightly, and refrigerate for up to 24 hours before baking. When you're ready, bake at 375°F until heated through, allowing extra time because the casserole is starting cold. Aim for an internal temperature of 165°F.
How do I store leftovers?
Place leftovers in an airtight container and refrigerate within 2 hours. They'll keep for approximately 3–4 days.
Can I freeze Italian Grinder Pasta Bake?
Yes. You can freeze individual portions or the entire cooked casserole for up to 2–3 months for best quality. Keep in mind that creamy sauces can sometimes separate slightly after freezing and reheating.
What's the best way to reheat it?
For individual portions, microwave with a splash of milk or water until heated through. For larger portions, cover with foil and reheat in a 350°F oven until the center reaches 165°F.
What kind of deli dressing should I use?
A tangy Italian-style deli dressing works best because it provides the acidity and seasoning associated with an Italian grinder sandwich. A creamy grinder-style dressing can also work, but it will produce a richer sauce. Taste the mixture before baking and adjust the seasoning accordingly.

Italian Grinder Pasta Bake (Creamy, Cheesy & Easy!)
Ingredients
- 12 oz ¾ lb Dry penne pasta
- 4 oz ¼ lb Hard salami, cut into thin strips
- 4 oz ¼ lb Deli ham, cut into thin strips
- ¼ cup Sliced pepperoni
- 2 tablespoons Sliced pepperoncini drained
- 2½ cups 20 fl oz Prepared creamy Alfredo sauce
- ½ cup 4 fl oz Prepared deli dressing, preferably Italian-style
- 8 oz ½ lb Provolone cheese, sliced or shredded
- 1 cup Shredded Italian-blend cheese or mozzarella
- ¼ teaspoon Salt or to taste
- ¼ teaspoon Black pepper
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9 x 13-inch baking dish. Bring a large pot of water to a boil. Add the penne pasta and cook for approximately 1–2 minutes less than the package's al dente instructions. Reserve ½ cup of pasta water, then drain the pasta and set it aside.
- Cut the hard salami and ham into thin strips. Slice the pepperoni if it isn't already sliced, and drain the pepperoncini to remove excess liquid. Set everything aside while you prepare the sauce.
- In a large mixing bowl, combine the Alfredo sauce, deli dressing, black pepper, and Italian seasoning. Whisk everything together until the sauce is smooth and evenly combined. Taste before adding the salt because the deli meats, dressing, and cheese already contain plenty of sodium.
- Add the cooked penne pasta to the bowl with the sauce. Next, add the sliced salami, ham, pepperoni, and pepperoncini. Gently toss everything together until the pasta and deli meats are evenly coated with the creamy sauce. If the mixture seems too thick, add a few tablespoons of the reserved pasta water.
- Transfer half of the pasta mixture into your prepared baking dish. Layer half of the provolone cheese over the pasta. Add the remaining pasta mixture, spreading it evenly across the dish. Finish by covering the top with the remaining provolone cheese and 1 cup of shredded Italian-blend cheese.
- Place the baking dish into the preheated oven and bake uncovered for approximately 20–25 minutes, or until the sauce is bubbling and the cheese is fully melted. For a more golden-brown cheese topping, switch the oven to broil for the final 1–2 minutes. Keep a close eye on the casserole while broiling because the cheese can brown quickly.
- Remove the pasta bake from the oven and allow it to rest for approximately 5 minutes. This helps the sauce settle slightly and makes the pasta easier to serve. Scoop generous portions onto plates and serve while the cheese is hot and melted.
