Whenever I want to make an impressive dinner without spending hours in the kitchen, this Steak Bites with Creamy Mushroom Orzo is one of my go-to recipes. I start by toasting the orzo until it's lightly golden before simmering it in chicken broth, giving it an incredible depth of flavor. While the orzo cooks, I make a rich mushroom cream sauce with sautéed mushrooms, onions, garlic, Parmesan cheese, and a splash of heavy cream. Then I sear bite-sized pieces of sirloin until they develop a beautiful crust while staying juicy inside. Everything comes together in one incredible meal where every bite combines tender steak with creamy, cheesy mushroom orzo. It tastes like something you'd order at a steakhouse, but it's easy enough to make any night of the week.

Steak Bites with Mushroom Orzo

Ingredients
  

Steak

  • 1 pound top sirloin steak cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter

Creamy Mushroom Orzo

  • 2 tablespoons unsalted butter divided
  • 1½ cups uncooked orzo
  • 3 cups chicken broth
  • 8 ounces Baby Bella mushrooms sliced
  • ½ teaspoon kosher salt divided
  • 1 large yellow onion diced
  • 1½ teaspoons garlic minced
  • ¾ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ¼ teaspoon black pepper
  • Pinch red pepper flakes optional
  • 1 teaspoon fresh lemon juice
  • Fresh parsley chopped

Instructions
 

  • Heat 1 tablespoon butter in a large skillet over medium heat. Add the orzo and cook for 3 to 4 minutes, stirring frequently until lightly golden.
  • Pour in the chicken broth. Bring to a boil. Reduce heat to low, cover, and cook for 12 to 15 minutes until tender. Remove from heat and keep covered.
  • In another skillet, melt the remaining tablespoon of butter. Add mushrooms in a single layer. Cook undisturbed for 2 to 3 minutes. Season with a pinch of salt. Add onions and continue cooking for 5 to 6 minutes until golden.
  • Add garlic and cook for 30 seconds. Reduce heat to medium-low.
  • Stir in: Heavy cream, parmesan cheese, remaining salt, black pepper, red pepper flakes. Simmer gently for 2 to 3 minutes until creamy. Stir in lemon juice.
  • Pour the mushroom cream sauce into the cooked orzo. Mix until creamy. Cover and keep warm.
  • Pat steak dry with paper towels. Season with salt and pepper.mHeat vegetable oil in a skillet over medium-high heat. Add steak in a single layer. Cook 2 minutes without moving. Flip and cook another 2 to 3 minutes. Reduce heat to medium-low. Add butter and spoon the melted butter over the steak for 30 seconds.
  • Spoon creamy mushroom orzo into a serving bowl. Top generously with steak bites. Sprinkle with fresh parsley.nServe immediately.
