Crispy Garlic Parmesan Hashbrown

When it comes to hash browns, I like mine crispy. And I'm not talking about a little color on the outside with a soft, soggy middle. I'm talking about that deep golden-brown crust that gives you a nice crunch when you bite into it.

And that's exactly what we're making with these Crispy Garlic Parmesan Hash Browns.

Now, everybody knows you can take some shredded potatoes, throw them into a skillet, and make hash browns. But I wanted to do something a little different with this recipe.

I wanted something that was crispy on the outside, tender on the inside, loaded with cheese, and seasoned well enough that you wouldn't need to add anything after cooking.

So we're starting with russet potatoes.

I like using russets because they're starchy, and that helps give these hash browns the texture we're looking for.

But instead of shredding the potatoes raw, I'm going to partially boil them first.

And there's a reason for that.

I want the potatoes to soften just enough that I can grate them and shape them into patties, but I don't want them completely cooked. If they're too soft, they'll turn into mashed potatoes when I start mixing everything together.

Once the potatoes have cooled, I grate them using the large holes of a box grater.

Now comes the part that really separates these from your everyday hash browns.

I'm adding cheddar cheese, freshly grated Parmesan, garlic powder, onion powder, black pepper, and a little salt.

And I'm also adding cornstarch.

That cornstarch helps bind the shredded potatoes together and contributes to the crispy exterior once they hit the hot oil.

But here's something important. You don't want to overmix the potatoes.

We're not trying to make mashed potatoes or potato dough.

I want those shredded pieces to maintain some of their texture.

Once everything is combined, I take a portion of the mixture and press it into a thick rectangular or oval-shaped patty.

And I make sure to press it firmly enough that it holds together.

Then it's time to fry.

I'm heating my oil to around 360°F because I want the outside to start crisping up as soon as the hash browns hit the skillet.

If the oil isn't hot enough, they can absorb too much oil before developing that golden crust.

And if it's too hot, the outside can get dark before the center heats through.

So temperature matters.

I let these cook for approximately 3–4 minutes per side, depending on their thickness, until they develop that beautiful golden-brown color.

And when I tell you these come out crispy, just look at that crust.

You've got all those little crispy pieces of shredded potato on the outside, the Parmesan adding its savory flavor, and the cheddar helping make the inside rich and cheesy.

But we're not stopping there.

I'm also making a simple homemade garlic dipping sauce.

And this sauce is about as easy as it gets.

I'm combining mayonnaise, freshly grated garlic, garlic powder, black pepper, lemon juice, and a little salt.

The mayonnaise gives us that creamy base, the garlic brings the flavor, and the lemon juice adds just enough acidity to balance everything out.

I like to refrigerate the sauce for about 15–20 minutes before serving because it gives those flavors a chance to come together.

Now, you could serve these hash browns for breakfast with eggs and bacon.

But personally, I think they're good enough to serve as an appetizer or a side dish with dinner.

And if you're having people over, put a plate of these on the table with that garlic dipping sauce and watch how quickly they disappear.

What I really like about this recipe is that we're taking something as simple as potatoes and turning it into something that feels a little more special.

You don't need any expensive ingredients.

You don't need any complicated cooking techniques.

Just some potatoes, cheese, seasonings, and a little patience while they fry.

And the result is a hash brown that's crunchy on the outside, tender and cheesy on the inside, and packed with garlic Parmesan flavor.

If you're tired of making the same old hash browns, give these a try.

Because once you make them this way, you might not want to go back to regular hash browns..

Recipe Variations

1. Spicy Garlic Parmesan Hash Browns

Add ½ teaspoon cayenne pepper or 1 teaspoon crushed red pepper flakes to the potato mixture for a spicy kick.

2. Bacon Cheddar Hash Browns

Mix ½ cup cooked, crumbled bacon into the potato mixture for extra smoky, savory flavor.

3. Jalapeño Cheddar Hash Browns

Add ¼ cup finely diced jalapeños and use sharp cheddar cheese for a little heat.

4. Loaded Hash Browns

Top the finished hash browns with sour cream, crispy bacon bits, shredded cheddar, and chopped green onions.

5. Mozzarella Garlic Hash Browns

Replace half the cheddar with shredded low-moisture mozzarella for a milder, stretchier cheese filling.

6. Cajun Parmesan Hash Browns

Replace some of the garlic and onion powder with 1–2 teaspoons of Cajun seasoning for a Southern-inspired variation. Adjust salt to taste.

7. Herb Parmesan Hash Browns

Add 1 teaspoon dried Italian seasoning and 1 tablespoon chopped fresh parsley directly into the potato mixture.

8. Air Fryer Garlic Parmesan Hash Browns

Lightly spray the formed patties with oil and air fry at 390°F for approximately 12–18 minutes, flipping halfway through, until golden and heated through. Results will differ from deep-frying, and cooking time depends on patty thickness and air fryer model.

Ingredients

For the Hash Browns:

  • 5 –6 large russet potatoes
  • 4 tablespoon cornstarch
  • 6 oz shredded cheddar cheese
  • ¾ cup freshly grated Parmesan cheese
  • 1½ tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 ½ teaspoon Salt

For the Garlic Dipping Sauce:

  • ½ cup mayonnaise
  • 1 –2 freshly grated garlic cloves
  • 1 tablespoon garlic powder
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • ½ teaspoon Salt

For Garnish:

  • Freshly grated Parmesan cheese
  • Fresh chopped parsley

Instructions

  • Peel 5–6 large russet potatoes. Place the potatoes into a large pot and cover with water. Add a generous pinch of salt. Bring the water to a boil and cook the potatoes for approximately 8 minutes, just until partially cooked. The potatoes should still be firm in the center. Avoid cooking them until fork-tender because they'll become too soft to grate properly.
  • Carefully drain the potatoes. Allow them to cool until they're comfortable to handle. For easier grating, you can refrigerate them for approximately 15–20 minutes. Make sure the potatoes are well-drained before continuing.
  • Using the large holes of a box grater, shred the partially cooked potatoes into a large mixing bowl. Work gently so the potatoes maintain their shredded texture. If necessary, remove any excess moisture with paper towels.
  • To the bowl of shredded potatoes, add: 4 tablespoons cornstarch, 6 ounces shredded cheddar cheese, ¾ cup freshly grated Parmesan cheese, 1½ tablespoons garlic powder, 1 tablespoon onion powder, 1 teaspoon black pepper, and 1 teaspoon salt, or to taste. Gently fold everything together until evenly combined. Avoid overmixing.
  • Take approximately ⅓–½ cup of the potato mixture. Using your hands, firmly press the mixture into a thick rectangle or oval-shaped patty. Aim for approximately ½–¾ inch thickness. Repeat until all the potato mixture has been shaped. If the patties feel too soft to handle, refrigerate them for 15–20 minutes before frying.
  • Pour approximately 1 inch of vegetable or canola oil into a heavy-bottomed skillet. Heat the oil over medium heat until it reaches approximately 360°F. Use a kitchen thermometer if available.
  • Carefully place a few hash browns into the hot oil. Avoid overcrowding the skillet. Fry for approximately 3–4 minutes on the first side until deeply golden brown. Using a slotted spatula or tongs, carefully flip each hash brown. Continue frying for another 3–4 minutes until both sides are crispy and golden. The centers should be hot and the potatoes fully tender.
  • Remove the hash browns from the oil. Transfer them to a wire rack positioned over a baking sheet. Allow excess oil to drain. A wire rack helps preserve the crispy texture better than stacking the hash browns directly on paper towels. Repeat with the remaining potato mixture.
  • In a small mixing bowl, combine: ½ cup mayonnaise, 1–2 freshly grated garlic cloves, 1 tablespoon garlic powder, ½ teaspoon black pepper, 1 tablespoon lemon juice, and ¼ teaspoon salt, or to taste Stir until smooth and creamy. Taste and adjust the seasoning or lemon juice if necessary.
  • Cover the garlic sauce and refrigerate for approximately 15–20 minutes. This allows the garlic and lemon flavors to develop.
  • Arrange the crispy hash browns on a serving plate. Sprinkle with freshly grated Parmesan cheese and chopped parsley. Serve immediately with the homemade garlic dipping sauce. Enjoy!

Recipe Tips

Remove as much moisture from the potatoes as possible before shaping them.
After partially boiling the potatoes, drain them thoroughly and allow them to cool.
If they still feel wet after grating, gently press them with paper towels or a clean kitchen towel to remove excess surface moisture.
Too much moisture can make the hash browns difficult to shape and prevent them from developing a crispy exterior.
Also, avoid overcrowding your skillet. Frying too many hash browns at once lowers the oil temperature, which can leave them greasy instead of crispy.
For the best results, keep your oil around 350–360°F while frying.
