If you're looking to take ordinary hot dogs to the next level, this recipe is exactly what you need. I start by grilling or pan frying the hot dogs until they develop a beautiful char and that classic snap in every bite. While they're cooking, I whip up a creamy homemade firecracker sauce made with mayonnaise, sriracha, honey, smoked paprika, garlic, and fresh lime juice. The sauce has the perfect balance of heat, sweetness, and tanginess.

I lightly toast the buns so they stay soft on the inside with just a little crispness on the outside. Then comes the fun part, building the hot dogs. I spread a generous layer of the firecracker sauce inside each bun before adding the grilled hot dog. From there I pile on sharp cheddar cheese, crunchy diced red onions, sliced jalapeños for extra heat, and fresh cilantro for a bright finish. These Spicy Firecracker Hot Dogs combine perfectly grilled hot dogs with a creamy homemade firecracker sauce, cheddar cheese, red onions, jalapeños, and fresh cilantro for an easy meal that's packed with bold flavor.

Ingredients
  

Hot Dogs

  • 8 hot dogs
  • 8 soft hot dog buns lightly toasted

Firecracker Sauce

  • ¼ cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice

Toppings

  • 1 cup shredded sharp cheddar cheese
  • ½ cup diced red onions
  • ½ cup sliced jalapeños optional
  • Fresh cilantro

Instructions
 

  • In a small bowl, whisk together the mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth and creamy.
  • Dice the red onions, slice the jalapeños, shred the cheddar cheese, and chop the cilantro. Set everything aside.
  • Preheat your grill to medium-high heat, about 400°F. If using a grill pan, heat it over medium-high heat.
  • Place the hot dogs on the grill and cook for 5 to 7 minutes, turning occasionally until evenly charred with a nice snap.
  • During the last 2 minutes of cooking, place the buns cut-side down on the grill until lightly toasted.
  • Spread a generous amount of firecracker sauce inside each toasted bun. Add a grilled hot dog, then top with shredded cheddar cheese, diced onions, sliced jalapeños, and chopped cilantro.
  • Drizzle with extra firecracker sauce if desired and serve immediately while everything is hot and the cheese begins to melt.
