These Spicy Firecracker Hot Dogs combine perfectly grilled hot dogs with a creamy homemade firecracker sauce, cheddar cheese, red onions, jalapeños, and fresh cilantro for an easy meal that's packed with bold flavor.
In a small bowl, whisk together the mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth and creamy.
Dice the red onions, slice the jalapeños, shred the cheddar cheese, and chop the cilantro. Set everything aside.
Preheat your grill to medium-high heat, about 400°F. If using a grill pan, heat it over medium-high heat.
Place the hot dogs on the grill and cook for 5 to 7 minutes, turning occasionally until evenly charred with a nice snap.
During the last 2 minutes of cooking, place the buns cut-side down on the grill until lightly toasted.
Spread a generous amount of firecracker sauce inside each toasted bun. Add a grilled hot dog, then top with shredded cheddar cheese, diced onions, sliced jalapeños, and chopped cilantro.
Drizzle with extra firecracker sauce if desired and serve immediately while everything is hot and the cheese begins to melt.
