These BBQ Chicken Sliders are one of my favorite easy meals because they're packed with flavor and come together in almost no time. I start with soft Hawaiian rolls, then pile on shredded rotisserie chicken tossed in smoky BBQ sauce. I layer plenty of melty Gouda cheese, add fresh diced red onion and cilantro for a little crunch and freshness, then finish everything with a generous brush of garlic herb butter. Once they come out of the oven, the tops are perfectly golden, the cheese is gooey, and every bite is loaded with sweet, smoky, cheesy goodness. These are perfect for game day, family dinners, parties, or anytime you need to feed a crowd.

BBQ Chicken Sliders

These BBQ Chicken Sliders combine tender shredded chicken, smoky BBQ sauce, melty Gouda cheese, and buttery Hawaiian rolls for an easy, crowd-pleasing meal that's ready in under 40 minutes.

Ingredients
  

  • 12 Hawaiian sweet dinner rolls
  • 3 cups shredded rotisserie chicken
  • 1 cup BBQ sauce
  • 12 slices Gouda cheese
  • ⅓ cup finely diced red onion
  • 2 tablespoons chopped cilantro
  • 4 tablespoons garlic herb butter melted
  • 1 tablespoon grated Parmesan cheese

Instructions
 

  • Preheat your oven to 400°F. Grease a 9x13-inch baking pan or sheet pan. Using a serrated knife, slice the Hawaiian rolls in half, keeping the tops and bottoms connected. Place the bottom half into the prepared pan.
  • In a medium bowl, combine: Shredded rotisserie chicken and BBQ sauce. Mix until every piece of chicken is coated.
  • Layer half of the cheese over the bottom buns. Spread the BBQ chicken evenly across the cheese. Sprinkle with diced red onion and chopped cilantro if using. Top with the remaining cheese slices. Place the top half of the rolls over everything.
  • Melt the garlic herb butter. Brush or pour it evenly over the tops and sides of the rolls. Allow some butter to drip into the pan for extra crispy bottoms. Sprinkle Parmesan cheese over the tops if desired.
  • Cover loosely with foil. Bake for 20 minutes. Remove the foil and continue baking for 3 to 6 minutes, until the cheese is melted and the tops are golden brown.
  • Allow the sliders to cool for 2 to 3 minutes. Slice apart and serve while they're hot and the cheese is perfectly melted.

Use rotisserie chicken to save time and warm it with the BBQ sauce before assembling the sliders. This keeps the filling juicy and helps prevent the sandwiches from drying out during baking.
