These BBQ Chicken Sliders combine tender shredded chicken, smoky BBQ sauce, melty Gouda cheese, and buttery Hawaiian rolls for an easy, crowd-pleasing meal that's ready in under 40 minutes.
Preheat your oven to 400°F. Grease a 9x13-inch baking pan or sheet pan. Using a serrated knife, slice the Hawaiian rolls in half, keeping the tops and bottoms connected. Place the bottom half into the prepared pan.
In a medium bowl, combine: Shredded rotisserie chicken and BBQ sauce. Mix until every piece of chicken is coated.
Layer half of the cheese over the bottom buns. Spread the BBQ chicken evenly across the cheese. Sprinkle with diced red onion and chopped cilantro if using. Top with the remaining cheese slices. Place the top half of the rolls over everything.
Melt the garlic herb butter. Brush or pour it evenly over the tops and sides of the rolls. Allow some butter to drip into the pan for extra crispy bottoms. Sprinkle Parmesan cheese over the tops if desired.
