If you're looking for the ultimate party sandwich or an easy weeknight dinner, these Steak & Cheese Sliders are hard to beat. I start by cooking thinly sliced sirloin steak until it's perfectly browned, then pair it with sweet sautéed onions and plenty of melted provolone cheese. Everything gets layered onto soft slider buns, brushed with a butter, and baked until the tops are golden brown and the cheese is irresistibly gooey. To take these sliders to the next level, I serve them with a homemade garlic aioli that's creamy, tangy, and packed with fresh garlic flavor. Every bite is buttery, cheesy, savory, and loaded with steak. These sliders disappear fast every time I make them.

  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Steak Sliders

  • 1 ¼ pound sirloin steak thinly sliced
  • 1 tablespoon olive oil
  • 1 large onion diced or thinly sliced
  • Salt and pepper to taste
  • 12 slider buns
  • 12 slices provolone cheese
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley

Instructions

  • In a small bowl, combine the mayonnaise, garlic, lemon juice, Dijon mustard, salt, and black pepper. Stir until smooth. Cover and refrigerate for at least 30 minutes.
  • Heat olive oil in a large skillet over medium heat. Add the onions and sauté for 5 to 7 minutes until soft and lightly caramelized. Transfer to a plate.
  • Season the steak with salt and pepper. Using the same skillet, cook the steak over medium-high heat for about 2 to 3 minutes per side until browned. Remove from heat.
  • Preheat oven to 350°F. Arrange the bottom halves of the slider buns on a baking sheet. Top evenly with: Cooked steak, Sautéed onions, and Provolone cheese. Place the top buns over the cheese.
  • Mix together: Melted butter, Garlic powder, and Dried parsley. Brush generously over the tops of the buns.
  • Bake for 10 to 12 minutes, or until the cheese is melted and the tops are lightly golden.
  • Serve immediately with the chilled garlic aioli for dipping. Enjoy while hot.

Recipe Tips

For the most tender steak, place the sirloin in the freezer for about 20 minutes before slicing. It makes it much easier to cut thin, even slices that cook quickly without becoming tough.
