This hamburger hash is one of those meals I make when I want something simple, hearty, and full of flavor without spending hours in the kitchen. I start by browning seasoned ground beef until it develops deep flavor, then I cook diced potatoes until they’re crispy on the outside and tender in the center. The onions, garlic, and peppers bring everything together while adding texture and freshness to the dish.

What I love most about this recipe is the balance between the crispy potatoes and the savory beef. Every bite has a little crunch, a little richness, and plenty of seasoning. It’s the kind of comfort food that works for breakfast, lunch, or dinner and tastes even better straight out of the skillet.

Ingredients

  • 1 pound ground beef
  • 3 medium potatoes diced
  • 1 small onion diced
  • 3 cloves garlic minced
  • ½ red bell pepper diced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 2 tablespoons butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ¼ beef broth
  • 2 tablespoon Ketchup
  • ½ teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden brown and fork tender.
  • Add diced onion and red bell pepper to the skillet. Cook for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds until fragrant.
  • Push the vegetables and potatoes to one side of the skillet and add the ground beef. Cook until browned, breaking it apart with a spoon as it cooks.
  • Sprinkle in chili powder, smoked paprika, thyme, salt, and black pepper. Stir everything together until fully combined. Add beef broth and ketchup.
  • Continue cooking for another 3-5 minutes so the flavors blend together and the potatoes develop additional crispy edges.
  • Remove from heat and garnish with fresh parsley. Serve hot straight from the skillet.

Recipe Tips

To get perfectly crispy potatoes, avoid overcrowding the skillet and let the potatoes cook undisturbed for a few minutes before stirring. That golden crust adds a ton of flavor to the hash.
