This Taco Potato Bake layers seasoned ground beef, sliced potatoes, salsa, and cheese into one easy casserole that's perfect for weeknight dinners, meal prep, or feeding a hungry family.
Preheat your oven to 375°F (205°C). Cook the ground beef in a large skillet over medium-high heat until browned. Drain any excess grease. Stir in the taco seasoning and salsa. Simmer for about 5 minutes.
Arrange half of the sliced potatoes in a lightly greased 9x13-inch baking dish. Spread half of the taco beef evenly over the potatoes. Sprinkle half of the shredded cheese over the beef.
Add the remaining potatoes. Top with the remaining taco beef. Finish with the remaining shredded cheese.
Cover tightly with foil. Bake for 45 minutes. Remove the foil and continue baking for another 15 minutes, or until the cheese is bubbly and lightly browned and the potatoes are fork tender.
Allow the casserole to rest for 5 minutes. Top with chopped green onions and a dollop of sour cream before serving. Enjoy!
