This Taco Potato Bake is one of those recipes I know my family is going to ask for again. Instead of using tortillas, I layer tender sliced potatoes with seasoned ground beef, salsa, and plenty of melty Mexican cheese. As it bakes, the potatoes soak up all those bold taco flavors while the cheese becomes perfectly golden and bubbly. I finish it with chopped green onions and a dollop of sour cream for the perfect creamy finish. It's everything you love about taco night in one hearty casserole that's simple to make and incredibly satisfying.

Taco Potato Baked

This Taco Potato Bake layers seasoned ground beef, sliced potatoes, salsa, and cheese into one easy casserole that's perfect for weeknight dinners, meal prep, or feeding a hungry family.

Ingredients
  

  • 1½ pounds gold potatoes sliced about ¼-inch thick
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1½ cups shredded Mexican cheese blend
  • ¼ cup chopped green onions
  • Sour cream for serving

Instructions
 

  • Preheat your oven to 375°F (205°C). Cook the ground beef in a large skillet over medium-high heat until browned. Drain any excess grease. Stir in the taco seasoning and salsa. Simmer for about 5 minutes.
  • Arrange half of the sliced potatoes in a lightly greased 9x13-inch baking dish. Spread half of the taco beef evenly over the potatoes. Sprinkle half of the shredded cheese over the beef.
  • Add the remaining potatoes. Top with the remaining taco beef. Finish with the remaining shredded cheese.
  • Cover tightly with foil. Bake for 45 minutes. Remove the foil and continue baking for another 15 minutes, or until the cheese is bubbly and lightly browned and the potatoes are fork tender.
  • Allow the casserole to rest for 5 minutes. Top with chopped green onions and a dollop of sour cream before serving. Enjoy!

Recipe Tips

Slice the potatoes as evenly as possible, about ¼-inch thick, so they cook at the same rate. If your potato slices are thicker, add another 10 to 15 minutes of baking time until they're fork tender.
