Pork Chop and Rice Casserole

One thing I've always appreciated about a good casserole is that you don't need a bunch of complicated ingredients to make a meal that's packed with flavor.

And this Pork Chop and Rice Casserole is a perfect example of that.

We're talking about thick-cut, bone-in pork chops, seasoned rice, and a rich mushroom and onion gravy, all baked together in one dish.

Now, I've made pork chops plenty of different ways over the years. I've fried them, baked them, smothered them in gravy, and cooked them in a skillet.

But there's something about combining pork chops and rice in a casserole that makes this recipe a little different.

What I really like is that the rice isn't just something you cook separately and serve on the side.

The rice is actually part of the cooking process.

Instead of boiling it in plain water, I'm allowing it to cook in a mixture of beef broth, cream of mushroom soup, Worcestershire sauce, and onion soup mix.

And that's where a lot of the flavor comes from.

As the casserole bakes, the rice absorbs that seasoned liquid, creating a rich, savory base for the pork chops.

But before everything goes into the oven, I like to build a little flavor on the stovetop.

First, I melt some butter in a skillet and add the uncooked rice and diced onions.

I'm not trying to cook the rice all the way through at this point.

I'm just giving it a couple of minutes in the butter to lightly toast the grains and soften those onions.

Then I transfer everything into my baking dish.

Tender bone-in pork chop served over seasoned rice with mushrooms, onions, rich brown gravy, and chopped parsley.

Next comes the gravy mixture.

I'm combining condensed cream of mushroom soup, low-sodium beef broth, Worcestershire sauce, and dry onion soup mix.

Now, if you've ever cooked with onion soup mix, you already know how much flavor it can bring to a recipe.

It has that deep, savory onion flavor that works especially well with beef broth and mushrooms.

And when you combine everything, you get a flavorful cooking liquid that's going to season the rice as it bakes.

Now let's talk about the pork chops.

For this recipe, I'm using thick-cut, bone-in pork chops.

I like bone-in pork chops because they're flavorful, and the thicker cut gives me a little more room to develop a nice sear without immediately overcooking the meat.

I'm keeping the seasoning simple with garlic powder and black pepper.

That's because there's already plenty of seasoning in the casserole itself.

Once the pork chops are seasoned, I get my skillet nice and hot, add a little butter, and sear them on both sides.

I'm not trying to cook them completely at this point.

What I want is that golden-brown color on the outside.

That browning adds another layer of flavor, and it makes the finished casserole look even better.

After searing, I place the pork chops right on top of the rice mixture.

Then everything goes into the oven.

And here's what I like about this part of the recipe.

While the casserole bakes, the rice is absorbing the seasoned broth, the mushroom soup is creating a rich gravy, and the pork chops are cooking right along with everything else.

The result is a complete meal with the meat, rice, and gravy already together.

There's no need to make three separate dishes just to put dinner on the table.

Toward the end of the cooking process, I remove the foil so the top can develop a little more color.

And when this casserole comes out of the oven, you've got browned pork chops sitting over a bed of savory rice with plenty of onion and mushroom gravy.

I like to finish it with a little chopped parsley, mainly to give it some color and freshness.

Now, this is the kind of meal that doesn't need a lot of extras.

You could serve it with green beans, roasted broccoli, or a simple side salad.

But the pork chops and rice are already hearty enough to make a satisfying dinner on their own.

And another thing I appreciate about this recipe is that it's made with ingredients that are easy to find.

We're not using any unusual seasonings or specialty sauces.

It's just a combination of everyday ingredients that work well together.

If you're someone who enjoys old-fashioned comfort food, this is definitely a recipe worth trying.

It's simple, filling, and full of savory flavor.

And sometimes, that's exactly what you want when it's time to make dinner..

Why You'll Love This Recipe

It's a complete meal in one dish. The pork chops, rice, and gravy cook together, making dinner preparation and cleanup easier.

It's packed with savory flavor. Cream of mushroom soup, beef broth, Worcestershire sauce, and onion soup mix create a rich, deeply seasoned casserole.

The rice absorbs all that flavor. Instead of cooking the rice separately in plain water, it absorbs the seasoned cooking liquid.

It's budget-friendly. The recipe uses pantry staples and familiar ingredients to make four generous servings.

It's family-friendly. Pork chops and rice are classic comfort foods that work well together.

It's great for leftovers. Properly stored leftovers can be reheated for another meal, with a splash of broth to restore moisture.

It's easy to customize. You can change the soup, seasonings, or vegetables to create different versions.

Recipe Variations

1. Cheesy Pork Chop and Rice Casserole

Add 1 cup shredded cheddar cheese to the rice mixture during the final few minutes of baking.

Allow the cheese to melt before serving.

2. French Onion Pork Chop and Rice Casserole

Replace the cream of mushroom soup with condensed cream of onion soup.

Add ½ cup shredded Gruyère or Swiss cheese near the end of baking for an extra onion-forward flavor.

3. Garlic Butter Pork Chop and Rice Casserole

Increase the garlic powder to 1 teaspoon.

Add 2 minced garlic cloves to the skillet when sautéing the onions and rice.

4. Mushroom Lover's Pork Chop Casserole

Add 8 ounces of sliced mushrooms to the skillet.

Sauté them until lightly browned before combining them with the rice.

5. Cajun Pork Chop and Rice Casserole

Season the pork chops with 1 to 2 teaspoons of Cajun seasoning instead of the original garlic powder and black pepper combination.

Use a low-sodium Cajun blend to avoid making the casserole too salty.

6. Chicken and Rice Casserole

Replace the pork chops with 4 bone-in chicken thighs.

Adjust the baking time as needed and cook the chicken to at least 165°F.

7. Creamy Ranch Pork Chop and Rice Casserole

Add 1 tablespoon ranch seasoning to the soup mixture.

Reduce or omit the onion soup mix to avoid excessive saltiness.

8. Pork Chop and Broccoli Rice Casserole

Add 1 to 1½ cups small broccoli florets during the final 15 minutes of cooking. Cover again as needed until the broccoli and rice are tender.

Recipe Tips

Keep the Casserole Covered Until the Rice Is Tender
The most important part of this recipe is making sure the rice has enough moisture and time to cook.
Because you're using uncooked rice, it needs to absorb the broth and soup mixture while baking.
Keep the casserole tightly covered with aluminum foil for most of the cooking time to trap the steam.
If the rice is still firm, add a small splash of hot broth if needed, cover the casserole again, and continue baking until tender.
Additional tips:
  • Use long-grain white rice. Brown rice and instant rice have different liquid requirements and cooking times.
  • Sear the pork chops first. This creates a browned exterior and adds flavor.
  • Don't overcook the pork chops. Check the thickest part with a meat thermometer, avoiding the bone. Pork chops are safe at 145°F after a 3-minute rest.
  • Use low-sodium broth. The onion soup mix and condensed soup already contain salt.
  • Allow the casserole to rest. Resting for approximately 5 minutes helps the rice absorb any remaining liquid and allows the pork chops to rest before serving.
