One thing I really enjoy making is a good pasta dish, especially when it's loaded with meat, cheese, and plenty of flavor.
And this Italian Sausage Pasta is one of those recipes that checks all the boxes.
We're talking about tender penne pasta, flavorful Italian sausage, tomatoes, onions, garlic, and plenty of melted mozzarella cheese.
Now, I know there are a lot of different ways to make pasta, but what I like about this recipe is that we're keeping the ingredients simple while still building plenty of flavor.
And the Italian sausage is really what makes this dish stand out.
Instead of using regular ground beef, I'm using Italian sausage because it already comes seasoned with herbs and spices. That gives the pasta a nice savory flavor without having to add a bunch of extra ingredients.
You can use mild Italian sausage if you want something the whole family can enjoy, or spicy Italian sausage if you like a little heat.
Personally, I think either one works well with the tomatoes and mozzarella cheese.
The first thing I do is get my penne pasta cooking in a pot of salted water.
I like using penne because those little tubes do a good job of holding onto the sauce, and you get a little bit of everything in each bite.
While the pasta is cooking, I start browning the Italian sausage in a skillet.
I break the sausage into bite-sized pieces and let it develop some color because that's where a lot of the flavor comes from.
Once the sausage is browned, I move it to a plate and start working on the vegetables.

I'm using chopped yellow onion and plenty of fresh garlic.
And when I say plenty of garlic, I'm talking about five cloves.
I want that garlic flavor to come through, especially with all the sausage and cheese we're adding.
Once the onions soften and the garlic becomes fragrant, I add the diced tomatoes along with their juices.
Then I season everything with dried basil, oregano, salt, and black pepper.
I let that mixture simmer for a few minutes so the flavors can come together.
After that, I add the Italian sausage back into the skillet and let everything cook together a little longer.
Now, here's where this pasta really starts coming together.
I add the cooked penne directly into the sausage and tomato mixture and toss everything until the pasta is coated.
Then I stir in some freshly shredded mozzarella cheese.
And that's what I like about this recipe.
We're not just sprinkling cheese on top and calling it a day.
We're actually mixing some of that mozzarella into the pasta so you get melted cheese throughout the entire dish.
Once everything is combined, I transfer the pasta into a baking dish and cover the top with the remaining mozzarella.
Then it goes into the oven until the cheese is melted, bubbly, and slightly golden.
And when this pasta comes out of the oven, that's when you really see what makes this recipe special.
You've got the seasoned Italian sausage mixed throughout the pasta, the tomatoes bringing a little acidity to balance the richness, and all that mozzarella melted into the dish.
And if you get a good scoop while it's still hot, you're going to get that cheese pull.
That's the part everybody loves.
Another thing I appreciate about this recipe is that you don't need to spend hours in the kitchen making it.
It's a straightforward pasta dish made with ingredients you can find at just about any grocery store.
And because it's baked in one dish, it's perfect for serving a family or making enough food to have leftovers the next day.
You can serve it with garlic bread, a simple salad, or some roasted vegetables.
But to be honest, this pasta is filling enough to stand on its own.
If you enjoy hearty pasta dishes with plenty of sausage, tomatoes, and cheese, this is definitely one worth adding to your dinner rotation.
It's simple, flavorful, cheesy, and exactly the kind of meal that brings everybody to the table.

Recipe Variations
1. Spicy Italian Sausage Pasta
Use hot Italian sausage instead of mild sausage. Add ½ teaspoon crushed red pepper flakes for extra heat.
2. Creamy Italian Sausage Pasta
Stir ½ cup heavy cream into the tomato mixture before adding the pasta. This creates a richer, creamier sauce.
3. Italian Sausage and Spinach Pasta
Add 2 cups of fresh baby spinach to the sauce during the final few minutes of simmering.
4. Three-Cheese Italian Sausage Pasta
Use a combination of mozzarella, Parmesan, and provolone cheese for a richer, more complex cheese flavor.
5. Italian Sausage and Mushroom Pasta
Add 8 ounces of sliced mushrooms when sautéing the onions. Cook until the mushrooms release their moisture and begin to brown.
6. Cajun Italian Sausage Pasta
Add 1–2 teaspoons Cajun seasoning to the sausage and tomato mixture for a Southern-inspired twist.
7. Italian Sausage and Bell Pepper Pasta
Add 1 diced red or green bell pepper along with the onions for extra flavor and color.
8. Italian Sausage Alfredo Pasta
Replace the diced tomatoes with approximately 2 cups of Alfredo sauce for a creamy white-sauce version. Reduce the salt as needed.

Italian Sausage Pasta
Ingredients
- 16 oz Mild or Spicy Italian Sausage
- 2 cup Dry Penne Pasta
- 1- 14 oz can Diced Tomatoes
- 2 ½ cups Freshly Grated Mozzarella
- 1 Yellow Onion chooped
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Oregano
- 1 to 2 teaspoon Salt
- ½ teaspoon Black Pepper
- 5 Garlic Cloves chopped
Instructions
- Set oven to 350°F (175°C) and lightly coat a 9x13inch baking sheet with cooking spray
- Bring a large pot of salted water to a boil, add the penne and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
- In a large skillet over medium heat, crumble the Italian sausage and cook, stirring occasionally, until fully browned and no pink remains.
- Add 2 tablespoon olive oil to the skillet, then stir in the diced onion. Cook until translucent, about 2 minutes, then add the minced garlic and sauté for another 1 minute, being careful not to burn it.
- Pour in the canned diced tomatoes with their juices, then season with salt, pepper, oregano, and 1 teaspoon dried basil. Stir and let simmer for 5 minutes.
- Return the cooked sausage to the skillet, lower the heat, cover, and let the mixture simmer gently for 10 minutes.
- Add the drained penne to the skillet, tossing to coat. Sprinkle in half of the shredded mozzarella and stir until melted and evenly distributed.
- Spread the pastasausage mixture evenly in the prepared 9x13 baking sheet. Sprinkle the remaining mozzarella (and optional Parmesan) over the top.
- Cover the sheet loosely with aluminum foil (pressing down so it doesn’t touch the cheese) and bake for 20 minutes, or until the cheese is bubbly and lightly golden.
- Remove the casserole from the oven, let it rest for 5 minutes, then sprinkle the remaining dried basil over the top before serving.
