This Taco Potato Bake is one of those recipes I know my family is going to ask for again. Instead of using tortillas, I layer tender sliced potatoes with seasoned ground beef, salsa, and plenty of melty Mexican cheese. As it bakes, the potatoes soak up all those bold taco flavors while the cheese becomes perfectly golden and bubbly. I finish it with chopped green onions and a dollop of sour cream for the perfect creamy finish. It's everything you love about taco night in one hearty casserole that's simple to make and incredibly satisfying.

- 1 packet taco seasoning
- 1 cup salsa
- 1½ cups shredded Mexican cheese blend
- ¼ cup chopped green onions
- Sour cream for serving
Instructions

- Arrange half of the sliced potatoes in a lightly greased 9x13-inch baking dish. Spread half of the taco beef evenly over the potatoes. Sprinkle half of the shredded cheese over the beef.
- Add the remaining potatoes. Top with the remaining taco beef. Finish with the remaining shredded cheese.
- Cover tightly with foil. Bake for 45 minutes. Remove the foil and continue baking for another 15 minutes, or until the cheese is bubbly and lightly browned and the potatoes are fork tender.
