Taco Pasta Salad is a bold and hearty one-pot meal that brings together your favorite taco flavors with comforting pasta. Loaded with seasoned ground beef, vegetables, and cheese, it’s quick to prepare and perfect for feeding a crowd.
Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
In a large skillet, add the ground beef to the skillet. Break it apart with a spoon and cook until browned and fully cooked. Drain any excess fat.
Stir in the taco seasoning packet and beef broth. Mix well to coat the meat. Let it simmer for 3 to 5 minutes until the sauce thickens slightly. Remove and set aside
In empty dish add sour cream, salsa, and lime juice. Mix to combine. Set aside.
In a large bowl add cooked pasta, ground beef, tomatoes, black beans, corn, onion, and jalapenos. Mix to combine.
Stir in the salsa and sour cream mixture. Mix well until everything is creamy and evenly combined.
Mix in chopped cilantro for brightness.
Add cheddar and Monterey Jack cheese. Mix well.
Spoon into bowls and top with a sprinkle of crushed Doritos for crunch and extra shredded cheese if desired.
