Spicy Jalapeño Chicken is a flavorful dish made with juicy chicken thighs cooked in a spicy glaze with fresh jalapeños. It’s the perfect recipe for heat lovers who want tender, saucy chicken with a kick.
Place chicken thighs in a large bowl. Add jalapeno powder, salt and black pepper, tossing to coat evenly.
Sprinkle cornstarch over the chicken and toss again until fully coated. Set aside.
In a small bowl, whisk together soy sauce, chicken broth, brown sugar, sesame oil, and minced garlic. Set aside.
Heat 4 inches of vegetable oil in a heavy-bottomed pot to 315°F (157°C).
Fry chicken pieces in small batches (4–5 at a time) for about 5–6 minutes, turning halfway through.
Remove and drain on a paper towel-lined plate.
Increase oil temperature to 350°F (176°C).
Return all chicken pieces to the oil for another 3–4 minutes to crisp up.
Drain thoroughly.
In a large skillet, heat olive oil over medium-high heat.
Add chopped onions and jalapenos. Sauté until softened. Set aside
Pour in the prepared soy sauce mixture and bring to a boil.
Add jalapeno and onion mixture to the pan
Add fried chicken pieces and sliced jalapeños to the skillet.
Toss until chicken is evenly coated and sauce thickens, about 3–4 minutes.
Transfer to a serving dish and garnish with extra jalapeño slices.
Serve hot with rice or noodles for a complete meal.
