smoked sausage
Andouille, cut into ½-inch rounds

olive oil

medium yellow onion
diced

garlic cloves

red bell pepper
chopped

green bell pepper
chopped

long-grain rice
rinsed until water runs clear

cups
chicken broth

teaspoon
Cajun seasoning

smoked paprika

honey

tablespoon
soy sauce

tablespoon
Dijon mustard

tablespoon
chopped fresh parsley

Instructions
Heat olive oil in a large skillet over medium-high heat.
Add sliced sausage and cook 5 to 7 minutes until browned.
Remove and set aside.
In the same pan, add diced onion. Cook 4 to 5 minutes until soft.
Add garlic and cook 30 to 60 seconds until fragrant.
Stir in red bell pepper, green bell pepper, and jalapeño if using.
Cook 4 to 6 minutes until slightly softened.
Add rinsed rice to the skillet.
Stir for 1 to 2 minutes to coat in flavor.
Pour in chicken broth.
Add Cajun seasoning, smoked paprika, cayenne, salt, and pepper.
Stir and scrape up any bits from the bottom.
Bring to a light boil, then reduce heat to low.
Cover and simmer for 18 to 20 minutes until rice is tender.
In a small bowl, whisk together Honey, Soy sauce, and Dijon mustard
Return sausage to skillet. Pour sauce over everything and stir gently. Cover and cook 2 to 3 more minutes.
Remove from heat and let sit covered for 5 minutes. Fluff with a fork. Top with parsley and green onions.

Recipe Tips
Toast the rice for a minute or two before adding liquid. This adds a deeper, almost nutty flavor and keeps the rice from getting mushy.
