8 to 10ozpastapenne or fettuccine

1oniondiced

1tablespoonDijon mustard
¼cupwhite wine
1teaspoonpaprika
½teaspoonred pepper flakes
1teaspoonItalian seasoning
1teaspoonsalt
½teaspoonblack pepper
¼cupfresh parsleychopped
1cupheavy cream
1cupchicken broth
½cupgrated Parmesan cheese
Instructions
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, melt ¼ cup butter.
Add the chicken pieces and season with salt and black pepper. Cook for about 5 to 7 minutes until the chicken is golden brown and fully cooked.
Remove the chicken from the skillet and set aside.
In the same skillet, melt the remaining ¼ cup butter.
Add the diced onion and cook for about 3 to 4 minutes until softened.

Add paprika, Italian seasoning, Dijon mustard, and red pepper flakes.
Stir and cook for 1 to 2 minutes to allow the flavors to bloom.
Pour in the white wine, chicken broth, and heavy cream.
Bring the mixture to a gentle simmer and cook for 2 to 3 minutes until the sauce begins to thicken.
Add the cooked chicken back into the skillet.
Stir in the cooked pasta and toss everything together so the noodles are fully coated in the creamy cowboy butter sauce.
Sprinkle in the grated Parmesan cheese and stir until melted and smooth.
Taste and adjust seasoning with additional salt and pepper if needed.
Remove from heat and sprinkle freshly chopped parsley over the pasta.
