This Cheesy Sausage and Potatoes recipe is a cozy and filling casserole made with tender potatoes, smoky sausage, and a velvety three cheese sauce. It is baked until golden and bubbly and perfect for family dinners, potlucks, or holiday comfort meals.
Preheat your oven to 375 degrees. Grease a 9 by 13 inch baking dish and set it aside.
Peel and cube the potatoes. Rinse them well to remove excess starch and pat them completely dry so they bake evenly.
Slice the smoked sausage into half inch rounds. Add to a skillet over medium heat and cook for 2 to 3 minutes on each side until lightly browned. Set aside.
In a medium saucepan, melt 2 tablespoons of butter. Add the diced onions and garlic and cook for 5 minutes until soft and fragrant.
Pour in the heavy cream and milk. Add garlic powder, onion powder, season salt, and black pepper. Bring to a gentle simmer.

Cover the dish tightly with foil and bake for 40 to 45 minutes. Remove the foil and bake for 15 more minutes until the top is golden and bubbling.
Optional: Broil the top for 2 to 3 minutes if you prefer a crispy cheesy crust.
Let the casserole rest for 5 to 10 minutes to allow the sauce to thicken. Garnish with fresh parsley and serve warm.
