Heat a large skillet over medium-high heat. Add ground beef and chopped onion.
Add salt, black pepper, ground mustard, onion powder, garlic powder, and smoked paprika.
Cook until beef is browned and onions are softened. Drain excess grease. Add minced garlic and BBQ sauce. Stir and cook for another minute.
Add the cooked potatoes to the skillet and mix everything together.
Sprinkle shredded Colby Jack cheese over the top. Add crumbled bacon and crispy fried onions.
Transfer skillet to a 400°F oven and bake for 5 to 7 minutes, or until the cheese is melted and bubbly.
Drizzle with additional BBQ sauce if desired and enjoy.
