I mixed all in a creamy taco-flavored sauce, then topped with sharp cheddar cheese and a sprinkling of crushed chips for added crunch. The combination of colors and textures creates a satisfying dish that’s perfect for weeknight dinners or meal prepping.

Taco Pasta Salad is a bold and hearty one-pot meal that brings together your favorite taco flavors with comforting pasta. Loaded with seasoned ground beef, vegetables, and cheese, it’s quick to prepare and perfect for feeding a crowd.

Ingredients
  

  • 8 oz Rotini Pasta
  • 1 pound Ground Beef
  • 1 cup Corn
  • 1 can Black Beans rinsed and drained
  • 1 cup Cheddar Cheese
  • ½ Monterey Jack Cheese
  • 1 pint Cherry Tomatoes
  • 1 Red Onion chopped
  • 1 Green Bell Pepper chopped
  • 1 Jalapeno chopped
  • 1 packet Taco Seasoning
  • ½ cup Cilantro chopped
  • ½ cup Beef Broth
  • 1 /2 cup Sour Cream
  • ½ cup Salsa
  • ¼ cup Crushed Doritos
  • Juice of 1 Lime

Instructions
 

  • Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, add the ground beef to the skillet. Break it apart with a spoon and cook until browned and fully cooked. Drain any excess fat.
  • Stir in the taco seasoning packet and beef broth. Mix well to coat the meat. Let it simmer for 3 to 5 minutes until the sauce thickens slightly. Remove and set aside
  • In empty dish add sour cream, salsa, and lime juice. Mix to combine. Set aside.
  • In a large bowl add cooked pasta, ground beef, tomatoes, black beans, corn, onion, and jalapenos. Mix to combine.
  • Stir in the salsa and sour cream mixture. Mix well until everything is creamy and evenly combined.
  • Mix in chopped cilantro for brightness.
  • Add cheddar and Monterey Jack cheese. Mix well.
  • Spoon into bowls and top with a sprinkle of crushed Doritos for crunch and extra shredded cheese if desired.

Recipe Tips

For extra creaminess, stir in a few tablespoons of sour cream or cream cheese right before serving. Want more crunch? Add crushed Doritos chips on top just before serving to keep them crispy.
