Taco Pasta Salad
Ingredients
- 8 oz Rotini Pasta
- 1 pound Ground Beef
- 1 cup Corn
- 1 can Black Beans rinsed and drained
- 1 cup Cheddar Cheese
- ½ Monterey Jack Cheese
- 1 pint Cherry Tomatoes
- 1 Red Onion chopped
- 1 Green Bell Pepper chopped
- 1 Jalapeno chopped
- 1 packet Taco Seasoning
- ½ cup Cilantro chopped
- ½ cup Beef Broth
- 1 /2 cup Sour Cream
- ½ cup Salsa
- ¼ cup Crushed Doritos
- Juice of 1 Lime
Instructions
- Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, add the ground beef to the skillet. Break it apart with a spoon and cook until browned and fully cooked. Drain any excess fat.
- Stir in the taco seasoning packet and beef broth. Mix well to coat the meat. Let it simmer for 3 to 5 minutes until the sauce thickens slightly. Remove and set aside
- In empty dish add sour cream, salsa, and lime juice. Mix to combine. Set aside.
- In a large bowl add cooked pasta, ground beef, tomatoes, black beans, corn, onion, and jalapenos. Mix to combine.
- Stir in the salsa and sour cream mixture. Mix well until everything is creamy and evenly combined.
- Mix in chopped cilantro for brightness.
- Add cheddar and Monterey Jack cheese. Mix well.
- Spoon into bowls and top with a sprinkle of crushed Doritos for crunch and extra shredded cheese if desired.
