Sweet Peppers and Sausage Pasta
Ingredients
- 12 oz penne pasta
- 19 oz smoked sausage sliced
- 2 to 3 bell peppers red and yellow, sliced
- 1 small onion diced
- 3 cloves garlic minced
- 1 can crushed tomatoes
- 1 cup heavy cream
- 1 to 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- ⅓ cup chicken broth
- ½ tablespoon Sazon Completa seasoning
- ½ teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil. Cook penne according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water if needed for the sauce.
- Heat olive oil in a skillet over medium heat. Add the sliced smoked sausage and cook until browned on both sides. Remove from skillet and set aside.
- In the same skillet, add onions. Cook for about 1 minute. Next add bell peppers and cook for 5 minutes until softened. Stir in minced garlic and cook 1 more minute.
- Pour in crushed tomatoes, Sazon Completa, and pepper. let simmer for 15 minutes
- Reduce heat to low and add the heavy cream and chicken broth, Stir well and let simmer for about 3 to 4 minutes.
- Next Parmesan cheese. Stir until smooth and creamy. If the sauce gets too thick, add a splash of pasta water.
- Add the cooked sausage back into the skillet. Add the drained pasta and mix well so the sauce coats everything evenly. Cook for another 2 to 3 minutes to let the flavors blend.
- Plate the pasta and garnish with fresh parsley or basil. Add extra Parmesan on top if desired.
