Sweet Peppers and Sausage Pasta

This Sweet Peppers and Sausage Pasta is a creamy and flavorful one skillet dinner made with penne, smoked sausage, and colorful bell peppers. The simple creamy tomato sauce brings everything together for a satisfying and delicious meal the whole family will love.

Ingredients
  

  • 12 oz penne pasta
  • 19 oz smoked sausage sliced
  • 2 to 3 bell peppers red and yellow, sliced
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can crushed tomatoes
  • 1 cup heavy cream
  • 1 to 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • ⅓ cup chicken broth
  • ½ tablespoon Sazon Completa seasoning
  • ½ teaspoon black pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Cook penne according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water if needed for the sauce.
  • Heat olive oil in a skillet over medium heat. Add the sliced smoked sausage and cook until browned on both sides. Remove from skillet and set aside.
  • In the same skillet, add onions. Cook for about 1 minute. Next add bell peppers and cook for 5 minutes until softened. Stir in minced garlic and cook 1 more minute.
  • Pour in crushed tomatoes, Sazon Completa, and pepper. let simmer for 15 minutes
  • Reduce heat to low and add the heavy cream and chicken broth, Stir well and let simmer for about 3 to 4 minutes.
  • Next Parmesan cheese. Stir until smooth and creamy. If the sauce gets too thick, add a splash of pasta water.
  • Add the cooked sausage back into the skillet. Add the drained pasta and mix well so the sauce coats everything evenly. Cook for another 2 to 3 minutes to let the flavors blend.
  • Plate the pasta and garnish with fresh parsley or basil. Add extra Parmesan on top if desired.

Recipe Tips

Slice the sausage and briefly sear the edges until they caramelize. This adds extra depth of flavor that makes the sauce taste even better.
