Spicy Jalapeno Chicken
Ingredients
- 1.5 to 2 pounds of Chicken Thighs
- 1 Onion chopped
- 2 to 3 Jalapenos chopped
- ¼ cup Corn Starch
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Jalapeno Powder
- ¼ cup Brown Sugar
- 4 to 5 Garlic Cloves minced
- ¼ cup Soy Sauce
- ¼ cup Chicken Broth
- 1 to 2 teaspoon Sesame Oil
- 1 tablespoon Olive Oil
Instructions
- Place chicken thighs in a large bowl. Add jalapeno powder, salt and black pepper, tossing to coat evenly.
- Sprinkle cornstarch over the chicken and toss again until fully coated. Set aside.
- In a small bowl, whisk together soy sauce, chicken broth, brown sugar, sesame oil, and minced garlic. Set aside.
- Heat 4 inches of vegetable oil in a heavy-bottomed pot to 315°F (157°C).
- Fry chicken pieces in small batches (4–5 at a time) for about 5–6 minutes, turning halfway through.
- Remove and drain on a paper towel-lined plate.
- Increase oil temperature to 350°F (176°C).
- Return all chicken pieces to the oil for another 3–4 minutes to crisp up.
- Drain thoroughly.
- In a large skillet, heat olive oil over medium-high heat.
- Add chopped onions and jalapenos. Sauté until softened. Set aside
- Pour in the prepared soy sauce mixture and bring to a boil.
- Add jalapeno and onion mixture to the pan
- Add fried chicken pieces and sliced jalapeños to the skillet.
- Toss until chicken is evenly coated and sauce thickens, about 3–4 minutes.
- Transfer to a serving dish and garnish with extra jalapeño slices.
- Serve hot with rice or noodles for a complete meal.
