This Honey Glazed Corn Casserole is a sweet and savory side dish made with whole kernel corn, cream-style corn, cheddar cheese, and a touch of honey. Rich, creamy, and baked to golden perfection.

Ingredients
  

  • 1 cup Whole Kernel Corn (drained)
  • 1 cup Cream Corn
  • 1 cup Heavy Whipping Cream or Sour Cream
  • 1 cup Cheddar Cheese
  • ½ cup Honey
  • ½ cup Melted Butter
  • 1 cup cup Corn Meal
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • ½` teaspoon Black Pepper
  • ½ teaspoon Garlic Powder
  • ¼ cup Green Onions

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish or a similar-sized casserole dish and set it aside.
  • Ina large mixing bowl, combine fresh sweet corn, whole kernel corn, heavy cream(or sour cream), honey, cheddar cheese, green onions and melted butter. Stir until everything is well blended.
  • In a separate bowl, whisk together the cornmeal, baking powder, salt, garlic powder and black pepper.
  • Gradually add the dry mixture to the wet ingredients,stirring gently until just moistened. Avoid overmixing to keep the casserolelight and tender.
  • Fold in the beaten eggs mixing until evenly incorporated.
  • Transfer the mixture into your prepared baking dish, spreading it out evenly with a spatula.
  • Place the dish in the oven and bake for 35 to 40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Remove from the oven and let the casserole rest for about 10minutes. Garnish with fresh parsley if desired.
  • Scoop out generous portions and enjoy the creamy, cheesy,and lightly sweet flavor of this honey-glazed corn casserole. It's perfect as aside dish or a standout vegetarian option.
