I start by making sure the wings are completely dry, because that’s the secret to getting that crave-worthy crispiness without deep frying. The baking powder and cornstarch combo creates a light, crackly coating that bakes up beautifully.

Once the wings are golden and crisp, I toss them in my homemade buffalo sauce made with butter, hot sauce, garlic, and just a touch of honey for balance. These crispy buffalo wings are oven-baked until golden and crunchy, then tossed in a homemade buttery buffalo sauce with garlic, vinegar, and a touch of honey for balance.

Ingredients
  

  • 1.5 to 2 pounds Chicken Wings
  • 2 tablespoon Baking Powder
  • ¼ cup Cornstarch
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ⅔ cup Hot Sauce
  • ½ cup Butter
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Worcestershire Sauce
  • 2 to 4 Garlic Cloves
  • 1 tablespoon Honey

Instructions
 

  • Preheat your oil to 350°F. Pat the chicken wings completely dry with paper towels and place them in a large bowl.
  • In a small bowl, mix together the baking powder, cornstarch, salt, black pepper, cayenne pepper, garlic powder, and onion powder.
  • Sprinkle the mixture over the wings and toss until evenly coated.
  • Arrange the wings in a single layer in the fryer basket.
  • Fry for 8 to 10 minutes, until the wings are golden brown and crispy.
  • While the wings are frying, melt the butter in a small saucepan over medium heat.
  • Add the minced garlic and cook for 30 seconds until fragrant.
  • Stir in the hot sauce, apple cider vinegar, Worcestershire sauce, and honey. Simmer for 2 to 3 minutes, then remove from heat.
  • Transfer the hot wings to a large bowl and pour the buffalo sauce over them.
  • Toss until the wings are fully coated. Serve immediately with celery sticks, ranch, or blue cheese dressing if desired.

For extra crispy wings, make sure the chicken wings are completely dry before seasoning. Pat them dry with paper towels and let them sit uncovered in the fridge for 30 minutes if you have time. This removes excess moisture and helps the coating crisp up even more.
