This sizzling hot Chicken Fajita Rice Casserole fresh from the oven. I used tender chunks of seasoned chicken breast that I mixed with sautéed red and green bell peppers, onions, and rice, then smothered in melted cheddar and mozzarella cheese. I garnished the dish with fresh herbs and features colorful textures throughout.

Variations and Additions:

Finish with Sour Cream or Guacamole when serving to cool the spice and add creaminess.

Add Black Beans or Corn for extra heartiness and texture.

Use Cauliflower Rice for a low-carb option.

Swap Chicken for Steak or Shrimp to customize the protein.

Top with Jalapeños or Hot Sauce for added heat.
