When I pull this Cheesy Sausage and Potatoes casserole out of the oven, the first thing that hits me is the smell. It is rich, savory, and warm in a way that only a combination of melted cheese, smoked sausage, and soft potatoes can be. As I scoop into the dish, the layers reveal themselves. Tender potatoes coated in a creamy, cheesy sauce, slices of smoky browned sausage tucked throughout, and a bubbly top that turns golden and irresistible. Every bite is hearty and comforting, the kind of food that makes you slow down and enjoy the moment. It is simple, satisfying, and feels like something I grew up eating around the dinner table.

Ingredients

  • 2 pounds potatoes cubed
  • 19 oz smoked sausage
  • 1 and 1 half cups mozzarella cheese shredded
  • 1 and 1 half cups cheddar cheese shredded
  • 1 half cup Parmesan cheese
  • 1 cup milk
  • 1 cup heavy whipping cream
  • 1 white onion diced
  • 4 tablespoons butter
  • 5 to 6 garlic cloves minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 half tablespoon season salt
  • 1 half teaspoon black pepper

Instructions

  • Preheat your oven to 375 degrees. Grease a 9 by 13 inch baking dish and set it aside.
  • Peel and cube the potatoes. Rinse them well to remove excess starch and pat them completely dry so they bake evenly.
  • Slice the smoked sausage into half inch rounds. Add to a skillet over medium heat and cook for 2 to 3 minutes on each side until lightly browned. Set aside.
  • In a medium saucepan, melt 2 tablespoons of butter. Add the diced onions and garlic and cook for 5 minutes until soft and fragrant.
  • Pour in the heavy cream and milk. Add garlic powder, onion powder, season salt, and black pepper. Bring to a gentle simmer.
  • Remove the pan from the heat. Stir in 3 fourths cup cheddar, 3 fourths cup mozzarella, and all the Parmesan until the sauce becomes smooth and creamy.
  • Layer half of the potatoes in the baking dish. Add half of the browned sausage and half of the cheese sauce. Repeat with the remaining ingredients.
  • Sprinkle the top with the remaining half cup of cheddar.
  • Cover the dish tightly with foil and bake for 40 to 45 minutes. Remove the foil and bake for 15 more minutes until the top is golden and bubbling.
  • Optional: Broil the top for 2 to 3 minutes if you prefer a crispy cheesy crust.
  • Let the casserole rest for 5 to 10 minutes to allow the sauce to thicken. Garnish with fresh parsley and serve warm.

Recipe Tips

For extra flavor, lightly pan fry the sausage slices until they develop a crispy edge before layering them into the casserole. This adds a deeper smoky flavor and prevents them from becoming too soft during baking.
