One thing I really enjoy making is a good pasta dish, especially when it's creamy, loaded with flavor, and doesn't require a whole lot of complicated ingredients.
And that's exactly what we're doing with this Ground Beef Alfredo.
Now, when most people think about Alfredo pasta, they usually think about chicken Alfredo or maybe shrimp Alfredo.
But today, I'm switching things up and using ground beef.
And I'm telling you, this combination works.
We've got seasoned ground beef, tender pasta, and a rich, creamy homemade Alfredo sauce made with Parmesan cheese, butter, milk, and heavy cream.
What I really like about this recipe is that we're not relying on a jar of store-bought Alfredo sauce.
We're making our own sauce from scratch, and it's actually a lot easier than some people might think.
The first thing I do is get my pasta cooking in a pot of salted water.
For this recipe, I'm using wide ribbon pasta because I like how that creamy sauce coats the noodles.
You can use fettuccine, pappardelle, or even penne if that's what you have available.
While the pasta is cooking, I start working on the ground beef.
I'm using one pound of ground beef, and I season it with garlic, paprika, Italian seasoning, salt, black pepper, and just a pinch of red pepper flakes.
Nothing complicated, but enough seasoning to make sure that beef has some flavor.
And that's important because I don't want the beef getting lost in all that cream and cheese.
I want you to taste the seasoned beef in every bite.
Once the ground beef is browned, I remove it from the skillet and start making the Alfredo sauce.

Now, this is where everything really comes together.
I melt some butter in the same skillet and whisk in a little flour.
That creates the base that's going to help thicken our sauce.
Then I slowly add the milk, making sure to whisk everything together so the sauce stays smooth.
After that, I add the heavy cream and let everything simmer gently until it starts to thicken.
And once the sauce reaches the consistency I'm looking for, I lower the heat and start adding the freshly grated Parmesan cheese.
Now, I want to emphasize something here.
If you can, use freshly grated Parmesan.
It really makes a difference in how smoothly the cheese melts into the sauce.
I also add a little salt, black pepper, and just a pinch of nutmeg.
And I know some people might look at that nutmeg and wonder what it's doing in an Alfredo sauce.
But we're only using a small amount.
It's not supposed to make the sauce taste like nutmeg. It just adds a little warmth that works nicely with the cream and cheese.
Once the sauce is smooth and creamy, I add the cooked ground beef back into the skillet.
Then I add the pasta and toss everything together until those noodles are completely coated.
And that's when you see what makes this recipe so good.
You've got the seasoned ground beef mixed throughout the pasta, and that creamy Parmesan sauce is clinging to every noodle.
It's rich, savory, and filling.
And because we're using ground beef instead of steak or shrimp, this is also a more budget-friendly way to make a hearty Alfredo pasta dinner.
Another thing I like about this recipe is how easy it is to customize.
If you want a little heat, use some extra red pepper flakes.
If you want to add vegetables, mushrooms or spinach would work really well.
And if you like your Alfredo sauce extra cheesy, you can always finish it with a little more Parmesan.
But even without adding anything extra, this is a satisfying pasta dish.
Serve it with garlic bread, a side salad, or just enjoy it by itself.
Because once you combine that seasoned ground beef with the creamy Alfredo sauce and tender pasta, you've already got a complete meal.
If you've been making the same chicken Alfredo recipe over and over again, this is definitely one worth trying.
It's simple, creamy, flavorful, and a great way to turn a pound of ground beef into something the whole family can enjoy.

2. Ground Beef and Mushroom Alfredo
Add 8 ounces of sliced mushrooms to the skillet after cooking the ground beef. Sauté until browned before preparing the sauce.
3. Garlic Parmesan Ground Beef Alfredo
Increase the garlic to 5–6 cloves and add an extra ¼ cup of Parmesan cheese for a stronger garlic and cheese flavor.

Creamy Ground Beef Alfredo
Ingredients
For the Ground Beef
- 1 pound ground beef 85–90% lean
- 1 tablespoon olive oil
- 3 garlic cloves minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- 1 pinch red pepper flakes
For the Alfredo Sauce
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk room temperature
- 1 cup heavy cream
- 1¼ cups freshly grated Parmesan cheese
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper or white pepper
- 1 pinch ground nutmeg
For the Pasta
- 12 ounces dry fettuccine or other long pasta
- ½ cup reserved pasta cooking water as needed
- Optional: Fresh parsley and additional Parmesan cheese for garnish
Instructions
- Bring a large pot of well-salted water to a boil. Add 12 ounces of fettuccine or your preferred pasta. Cook according to the package instructions until al dente. Before draining, reserve ½ cup of the pasta cooking water. Drain the pasta and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef. Using a wooden spoon or spatula, break the beef into small crumbles. Cook for approximately 6–8 minutes until browned and fully cooked.
- Once the beef is browned, add: 3 minced garlic cloves, ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon paprika, ½ teaspoon Italian seasoning, and 1 pinch red pepper flakes. Stir everything together and cook for approximately 1 minute until the garlic becomes fragrant. If the skillet contains excess grease, drain most of it, leaving a small amount for flavor. Transfer the cooked ground beef to a plate and set aside.
- Reduce the heat to medium. In the same skillet, melt 3 tablespoons of unsalted butter. Once the butter has melted, sprinkle in 3 tablespoons of all-purpose flour. Whisk continuously for approximately 1–2 minutes. You want the flour to cook without turning brown. This mixture will help thicken the Alfredo sauce.
- Slowly pour in 2 cups of room-temperature whole milk while whisking continuously. Continue whisking until the mixture becomes smooth and begins to thicken. Add 1 cup of heavy cream. Stir until fully combined. Allow the sauce to simmer gently for approximately 3 minutes, stirring occasionally. Avoid bringing the sauce to a rapid boil.
- Reduce the heat to low. Gradually stir in 1¼ cups of freshly grated Parmesan cheese. Continue stirring until the cheese melts and the sauce becomes smooth. Add: ½ teaspoon salt, or to taste, ¼ teaspoon black pepper or white pepper, and 1 pinch ground nutmeg Stir until everything is combined. If the sauce becomes too thick, add a small splash of reserved pasta water.
- Add the cooked ground beef back into the skillet. Stir until the beef is evenly distributed throughout the Alfredo sauce. Allow everything to warm through over low heat for approximately 1–2 minutes.
- Add the drained pasta directly into the skillet. Using tongs, gently toss the noodles until they're completely coated in the creamy beef Alfredo sauce. If necessary, add reserved pasta water, a tablespoon at a time, until the sauce reaches your preferred consistency.
- Taste the pasta and adjust the seasoning if necessary. You can add more black pepper, Parmesan cheese, or red pepper flakes depending on your preference.
- Remove the skillet from the heat. Serve the Ground Beef Alfredo immediately while the sauce is creamy and hot. If desired, garnish with freshly chopped parsley and additional Parmesan cheese. Enjoy!
