This came out unbelievably juicy and flavorful. The meatloaf itself is packed with seasoned ground beef, garlic, parmesan cheese, onions, parsley, and Italian seasoning, giving it a rich homemade flavor in every bite. But what really takes this recipe over the top is the creamy garlic parmesan sauce poured all over the top.
As soon as I sliced into it, you could see how moist and tender the inside was. The cream sauce melts right into the meatloaf, creating this rich, savory flavor that reminds me of comfort food with an upgraded twist. The edges get slightly caramelized while the inside stays soft and juicy. This is one of those meals that tastes like it took all day to make, but it’s actually simple enough for a weeknight dinner.

Garlic Parmesan Meatloaf

This Garlic Parmesan Meatloaf is a juicy, flavor-packed twist on classic meatloaf made with parmesan cheese, garlic, herbs, and topped with a creamy garlic parmesan sauce that takes comfort food to another level.

Ingredients
  

Meatloaf

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ cup milk
  • ½ cup finely chopped onion
  • 3 cloves garlic minced
  • ¼ cup chopped fresh parsley
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning

Garlic Parmesan Sauce

  • ½ cup salted butter
  • ⅓ cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 4 cloves garlic pressed
  • ⅛ teaspoon salt optional
  • ½ teaspoon black pepper
  • ¾ cup heavy cream

Instructions
 

  • Preheat your oven to 375°F.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, parmesan cheese, milk, onion, garlic, parsley, egg, Worcestershire sauce, salt, pepper, garlic powder, and Italian seasoning.
  • Mix everything together until just combined. Do not overmix.
  • Transfer the meat mixture into a lightly greased loaf pan or shape it by hand onto a baking sheet.
  • Bake uncovered for 50 to 60 minutes or until the internal temperature reaches 160°F.
  • While the meatloaf cooks, melt butter in a saucepan over medium heat.
  • Add the garlic and cook for about 30 seconds until fragrant. Stir in the heavy cream, parmesan cheese, parsley, salt, and black pepper.
  • Cook for 3 to 5 minutes, stirring frequently until smooth and creamy.
  • Remove the meatloaf from the oven and let it rest for 5 to 10 minutes before slicing.
  • Pour the creamy garlic parmesan sauce over the meatloaf and garnish with extra parmesan cheese and parsley before serving.

For the juiciest meatloaf, avoid overmixing the meat mixture. Mix just until combined so the meatloaf stays tender and soft instead of dense and tough.
