Meat Lover's Pizza Enchiladas
Ingredients
- ½ pound Ground Beef
- ½ pound Italian Sausage
- 1 Small Onions diced
- 1 Bell Peppers diced any color
- ½ cup chopped pepperoni
- 4 to 5 Garlic Cloves chopped
- 1 cup + ½ cup Pizza Sauce
- 1 teaspoon Italian seasoning
- 1 ½ cups + ½ cups Mozzarella Cheese shredded
- ½ cup Parmesan Cheese shredded
- ½ cup Crumbled Bacon plus extra for topping
- 6 –8 large flour tortillas
- Extra Pepperoni Slices for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium-high heat, add the lean ground beef. Cook and crumble it well until fully browned.
- Add diced onions, bell peppers, and chopped pepperoni to the skillet. Stir and cook for about 5 minutes until the vegetables soften.
- Stir in the chopped garlic and cook for another 2 minutes, just until fragrant.
- Remove the skillet from heat. Stir in 1 cup of pizza sauce, Italian seasoning, ricotta cheese, shredded mozzarella, and crumbled bacon. Mix everything until well combined.
- Lay the flour tortillas flat. Scoop about ⅓ to ½ cup of the meat filling down the center of each tortilla, then roll them up tightly.
- Lightly spray a baking sheet or 9×13-inch baking dish with cooking spray. Place the rolled tortillas seam-side down into the dish.
- Pour the remaining ½ cup of pizza sauce over the top of the enchiladas. Then sprinkle with shredded mozzarella, pepperoni slices, and extra crumbled bacon.
