Meat Lover's Pizza Enchiladas

Meat Lover’s Pizza Enchiladas are a delicious fusion of two comfort food favorites. This dish combines the bold, cheesy flavors of a pizza with the soft texture of baked enchiladas, stuffed with meats like sausage, bacon, or pepperoni, and topped with pizza sauce, melted cheese, and more savory toppings.

Ingredients
  

  • ½ pound Ground Beef
  • ½ pound Italian Sausage
  • 1 Small Onions diced
  • 1 Bell Peppers diced any color
  • ½ cup chopped pepperoni
  • 4 to 5 Garlic Cloves chopped
  • 1 cup + ½ cup Pizza Sauce
  • 1 teaspoon Italian seasoning
  • 1 ½ cups + ½ cups Mozzarella Cheese shredded
  • ½ cup Parmesan Cheese shredded
  • ½ cup Crumbled Bacon plus extra for topping
  • 6 –8 large flour tortillas
  • Extra Pepperoni Slices for topping

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium-high heat, add the lean ground beef. Cook and crumble it well until fully browned.
  • Add diced onions, bell peppers, and chopped pepperoni to the skillet. Stir and cook for about 5 minutes until the vegetables soften.
  • Stir in the chopped garlic and cook for another 2 minutes, just until fragrant.
  • Remove the skillet from heat. Stir in 1 cup of pizza sauce, Italian seasoning, ricotta cheese, shredded mozzarella, and crumbled bacon. Mix everything until well combined.
  • Lay the flour tortillas flat. Scoop about ⅓ to ½ cup of the meat filling down the center of each tortilla, then roll them up tightly.
  • Lightly spray a baking sheet or 9×13-inch baking dish with cooking spray. Place the rolled tortillas seam-side down into the dish.
  • Pour the remaining ½ cup of pizza sauce over the top of the enchiladas. Then sprinkle with shredded mozzarella, pepperoni slices, and extra crumbled bacon.
  • Bake in the preheated oven for 20 to 25 minutes, or until the cheese is melted and golden around the edges.
  • Remove from oven and let cool for a few minutes. Serve warm and enjoy your Meat Lover’s Pizza Enchiladas.

To prevent soggy tortillas, warm them before rolling. This helps maintain their structure while baking and enhances the texture of the finished dish. For added crisp, broil the top for 1 to 2 minutes at the end of baking.
