If there's one thing I love, it's taking a simple ingredient like ground beef and turning it into something that's packed with flavor. And these Cheesy Tex-Mex Meatballs are exactly that!
Now, I've made plenty of meatballs over the years, but this recipe takes things in a completely different direction. Instead of your traditional Italian-style meatballs, I'm bringing in some bold Tex-Mex flavors with cumin, chili powder, fresh jalapeños, garlic, and smoky chipotle peppers.
And let me tell you, the combination is something serious!
What makes these meatballs so good is that I'm not just seasoning the outside. I'm building flavor right into the meat mixture. I add shredded Mexican-blend cheese directly into the ground beef, along with panko breadcrumbs, fresh parsley, garlic, and spices. That cheese melts as the meatballs cook, helping create a juicy, cheesy bite.
But we're not stopping there.
Once I get a nice brown crust on those meatballs, I use that same skillet to make a smoky chipotle tomato sauce. The crushed tomatoes give the sauce a rich base, while the chipotle peppers in adobo bring that smoky heat that really sets this recipe apart.
After the meatballs finish simmering in the sauce, I cover everything with another layer of shredded cheese and let it melt right over the top.
The result? Tender, juicy meatballs sitting in a rich, slightly spicy tomato sauce with melted cheese covering every bite.
What I really like about this recipe is its versatility. You can serve these meatballs over rice, stuff them into a toasted sub roll, or put them out as an appetizer when you've got people coming over.
And the best part is that everything comes together in one skillet, which means less cleanup and more time to enjoy your food.
If you love bold flavors, cheesy dishes, and recipes that don't require a bunch of complicated steps, these Tex-Mex Meatballs are definitely worth making.

Why you'll love this recipe
If you're looking for a way to switch up your regular meatball recipe, these Cheesy Tex-Mex Meatballs are going to become a favorite. Here's why I keep coming back to this recipe.
- Loaded with bold flavor: The combination of cumin, chili powder, garlic, jalapeños, and chipotle peppers gives these meatballs a smoky, savory flavor with just the right amount of heat.
- Cheesy inside and out: I'm adding shredded cheese directly into the meat mixture and finishing everything with another layer of melted cheese.
- One-skillet convenience: You can brown the meatballs, prepare the sauce, and finish cooking everything in the same skillet.
- Perfect for different occasions: Whether you're making dinner for the family, preparing appetizers for game day, or putting together a hearty meatball sub, this recipe works.
- Easy to customize: You can adjust the heat, swap out the ground beef, or experiment with different cheeses to make this recipe your own.

Recipe variations
1. Spicy Tex-Mex Meatballs
If you enjoy extra heat, leave the seeds in your jalapeño or add another chopped chipotle pepper to the sauce. You can also sprinkle in some cayenne pepper for an additional kick.
2. Cheesy Tex-Mex Turkey Meatballs
Swap the ground beef for 1½ pounds of ground turkey. This is a great alternative if you prefer poultry. Just be careful not to overcook the meatballs, since turkey can dry out more quickly.
3. Creamy Chipotle Meatballs
For a creamier sauce, stir ¼ cup of heavy cream into the crushed tomatoes and chipotle peppers before returning the meatballs to the skillet. This creates a richer, smoother sauce that balances the smoky heat.
4. Tex-Mex Meatball Subs
Place the cooked meatballs inside toasted hoagie rolls, spoon some of that smoky tomato sauce over the top, and add extra shredded cheese. Broil briefly until the cheese is bubbly.
5. Low-Carb Tex-Mex Meatballs
Replace the panko breadcrumbs with approximately ¼ cup of almond flour or crushed pork rinds. Serve the meatballs over cauliflower rice or alongside roasted vegetables.
6. Tex-Mex Meatballs with Black Beans and Corn
Add ½ cup of drained black beans and ½ cup of corn to the tomato sauce. Let everything simmer together for a heartier, Southwestern-inspired dish.

Cheesy Tex-Mex Meatballs
Ingredients
- 1½ lbs ground beef
- ½ cup panko breadcrumbs
- ½ teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 4 garlic cloves minced
- 1 jalapeño diced
- 2 tablespoon fresh parsley
- 1 large egg
- 2 cups shredded Mexican-blend cheese divided
- 2 tablespoon olive oil
- ½ medium yellow onion diced
- 1 15 oz can crushed tomatoes
- 2 chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce
Instructions
- In a large mixing bowl, combine the ground beef, panko breadcrumbs, chili powder, cumin, kosher salt, black pepper, minced garlic, diced jalapeño, chopped parsley, 1 cup of shredded Mexican-blend cheese, and the egg. Using your hands or a spoon, gently mix everything until the ingredients are evenly distributed. Avoid overmixing.
- Scoop out portions of the meat mixture and roll them into evenly sized meatballs. Aim for approximately 15 meatballs, about 1½ to 2 inches in diameter. Place the formed meatballs onto a plate or tray while you prepare your skillet.
- Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
- Once the oil is hot, carefully add the meatballs in batches. Sear for approximately 2–3 minutes per side, turning gently until browned on multiple sides. The meatballs do not need to be fully cooked at this stage because they'll finish cooking in the sauce.
- Transfer the browned meatballs to a clean plate and set aside. Reduce the heat to medium and add the remaining tablespoon of olive oil to the same skillet. Add the chopped onion and sauté for approximately 3–5 minutes until softened, stirring occasionally. Cook for another 1–2 minutes to develop flavor, without burning the onions.
- Pour the crushed tomatoes into the skillet, followed by the chopped chipotle peppers and 1 tablespoon of adobo sauce. Stir everything together, scraping up any browned bits from the bottom of the skillet. Bring the sauce to a gentle simmer and cook for approximately 2–3 minutes to allow the flavors to develop.
- Reduce the heat to low and carefully return the browned meatballs to the skillet. Spoon some of the chipotle tomato sauce over each meatball. Cover the skillet and allow the meatballs to simmer for approximately 10–15 minutes, or until the centers reach an internal temperature of 160°F (71°C). Cooking time will vary with meatball size.
- Once the meatballs are fully cooked, sprinkle the remaining 1 cup of shredded Mexican-blend cheese evenly over the top. Cover the skillet again and allow the cheese to melt for approximately 2–3 minutes. You'll know it's ready when the cheese is completely melted and the sauce is bubbling gently around the meatballs.
- Remove the skillet from the heat and sprinkle freshly chopped parsley over the meatballs. Serve immediately while the cheese is hot and melted. Enjoy these meatballs over rice, inside toasted sub rolls, alongside warm tortillas, or straight from the skillet as an appetizer.
