French Onion Ground Beef and Rice Casserole

This French Onion Ground Beef and Rice Casserole is a simple, satisfying dish made with ground beef, rice, French onion soup mix, and Swiss cheese. Baked until hot and bubbly with a crispy onion topping.

Ingredients
  

  • 1.5 pounds Ground Beef
  • 1 cup Rice
  • 2 tablespoons Olive Oil
  • 1 packet French Onion soup mix
  • 1 cup Fried Onions
  • 1 cup Shredded Swiss Cheese
  • ½ cup Grated Parmesan Cheese
  • 1 Onion diced
  • 1 teaspoon Thyme
  • 2 cup Beef Broth
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Black Pepper
  • 4 tablespoons Butter

Instructions
 

  • Preheat your oven to 375°F
  • Grease a 9×13 inch (23×33 cm) baking dish with cooking spray and set aside.
  • In a large skillet over medium heat up your olive oil, then add your onions. Cook for 5 to 6 minute until translucent.
  • Add the ground beef and season with onion powder, garlic powder, salt, black pepper, and thyme. Cook until fully browned, breaking the meat into crumbles as it cooks. Once done, remove from heat and drain
  • Take a large mixing bowl, add ground beef, uncooked rice, French onion soup mix, and beef broth. Mix to combine.
  • Grease the bottom of a baking dish. Pour in ground beef mixture.
  • Slice butter into small pieces and arrange evenly over the top of the casserole mixture.
  • Cover the dish tightly with foil and bake in the preheated oven for 30 minutes.
  • After 30 minutes add your Swiss and Parmesan cheese to the top of the casserole
  • Remove the foil and continue baking for another 30 minutes, or until the top is golden and the rice is tender and fully cooked.
  • Top with Crispy Onions. Place in the oven for an additional 5 minutes
  • Sprinkle with fresh parsley

    Can you substitute the regular rice with cauliflower rice? What recommendations would you make if doing so? Thank you in advance for your time and consideration.

      You can but to cook cauliflower rice takes about 8 minutes. So you would need to adjust your time.
